Stephane has been an invaluable member of the Four Frogs team for three and a half years.

Where are you from in France and how long have you worked in the hospitality industry?

I’m from the other part of France the smallest and beautiful island of Tahiti!!!

I’m in the industry since 13 years now

What do you like about this industry?

I love cooking and seeing people enjoying a good meal and a good time around a table.

For me, it’s very important to share a good time around food.

What interested you in joining the team at Four Frogs?

I joined Four Frogs because I wanted to have the experience of crêpes and galettes in my life. On my first day, I really liked the good mood that the people working there showed me.

In particular, Raphael, the head chef in Mosman, showed me his passion about this product. And, as someone who is equally passionate about food, I really appreciated this.

What is your favourite galette or crepe?

My favourite crepe still the butter sugar. It’s so simple – but it’s not always easy to make a great butter and sugar!

My favourite galettes are the ones I create.

If you could be a superhero which one would you be?

MAUI!

If you could create a special crepe or galette what would it be?

Lamb tajine, seafood with white wine sauce and slow cooked confit leek, lemon curd with crumble – there are so many to create.
