I joined Four Frogs because I wanted to have the experience of crêpes and galettes in my life. On my first day, I really liked the good mood that the people working there showed me.
In particular, Raphael, the head chef in Mosman, showed me his passion about this product. And, as someone who is equally passionate about food, I really appreciated this.
My favourite crepe still the butter sugar. It’s so simple – but it’s not always easy to make a great butter and sugar!
My favourite galettes are the ones I create.
Lamb tajine, seafood with white wine sauce and slow cooked confit leek, lemon curd with crumble – there are so many to create.
